I’m so excited to be working with the Designed To Fit Nutrition team helping you all reach your goals. Here’s a bit of background about me.
I graduated from college in 2005 about 25 pounds overweight. I was the perfect cliche of someone who was “uncomfortable in her own skin.” Clothes didn’t fit, pictures weren’t flattering, and I was ready for change. I began to count calories as a way to learn more about what I was eating. I found food journaling to be freeing and insightful, and I learned so much about nutrition in the process. I lost about 30 pounds, and began to research ways that I could help others do the same.
In 2007, I started my blog, Kath Eats Real Food, to share the how and why behind eating well. My goal was to show that healthy eating wasn’t about deprivation, “diet food”or iceberg lettuce. I had learned that healthy eating isn’t about what you’re not eating but what you are. That same year I went back to school to become a Registered Dietitian. My dream was to help people lose weight and get healthy by coaching them to focus on real food. I’ve been blogging for a decade this year, and I’m excited to jump into one-on-one nutrition coaching as well.
My food philosophy includes quick and easy meals using whole food ingredients, with an emphasis on grass-fed and humanely-raised meat and dairy products. I embrace all the food groups, and live the 80/20 life where the foundation of my diet is plant-based with a sprinkle of indulgence to keep me happy. I think eating intuitively and mindfully is as important as eating nutritiously. I want you to enjoy your kale salads as much as you enjoy a slice of wedding cake.
Aside from nutrition, I live in Charlottesville, Virginia, and I’m a mom to a cute 4.5 year old boy. I play on a co-ed adult soccer league year round, and it’s my favorite workout of the week. I love Survivor (yes, “that show is still on”), home organization, the beach, wine tasting, oatmeal and seafood.
